Job Description

  1. Direct the operation of the kitchen, including food preparation and quality, physical maintenance, and inventory functions, to ensure hotel quality standards and revenue goals are met and food and supply costs are controlled.
  2. Complete forecasts, plans, and departmental production reports for management.
  3. Maintain updated and accurate costing and documentation of all dishes prepared and sold in the food and beverage operations.
  4. Manage day-to-day kitchen activities, plan and assign work, and establish performance and development goals for team members. Provide mentoring, coaching, and regular feedback to help manage conflict and improve team member performance.
  5. Define menu concepts and update dishes, Choosing the key ingredients for dishes on various menu types.
  6. Assist with addressing customer questions and issues relating to kitchen services & Assist Food and Beverage Manager with menu planning, food and beverage coordination, table arrangements, decoration options, etc.
  7. Develop menus design and concepts for all food and/or bar outlets, and catering events include monitoring competitor and industry trends.

Qualification

  1. Vocational diploma or degree in hospitality - with min 1-3 years experience in simillar position (3-5 star chain),
  2. Able to effectively deal with internal and external customers, some of whom will require high levels of patience, tact and diplomacy to defuse anger, collect and analyze accurate information and resolve conflicts.
  3. Able to read, write, speak and understand English to communicate effectively with guests and employees.
  4. Through organization and supervisory skills.
  5. Excellent mathematical comprehension to understand and interpret numbers as they apply to operations in hotels.
  6. Proficient in accomplishing tasks, able to work under pressure and deal with stressful situations during busy periods.
  7. Highly motivated, good team player, passionate, adaptable, proactive, & guest oriented.
  • Other Background Positions ; Commis/Pastry/Demi/Sous Chef/Etc is preffered.
