One of the tenant in Palembang Indah Mall and first Toby's Estate in Palembang. Toby's Estate is Australia's pioneering speciality coffee roaster. We work directly with renowed and emerging farmers all over the world to bring the best beans, from monthly origins to our Toby's signature.

RESPONSIBILITIES :

1. Managing and working closely with other chefs of all levels.
2. Controlling and directing the food preparation process and any other relative activities; ensuring that all food and products are consistently prepared and served according to the restaurants recipes, portioning, cooking and serving standards.
3. Approving and “polish”-ing dishes before they reach the customers.
4. Determining food inventory needs, stocking and ordering:
5. Controlling food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures including checking and maintaining proper food holding and refrigeration temperature control points.
6. Filling in where needed to ensure guest service standards and efficient operations.
7. Creating menu items, recipes and developing dishes ensuring variety and quality; establishing portion sizes and preparing standard recipe cards for all new menu items.
8. Preparing all required paperwork, including forms, reports and schedules in an organized and timely manner.
9. Being responsible for food hygiene practices. Ultimately responsible for ensuring the kitchen meets all regulations including sanitary and food safety guidelines.
10. Overseeing the work of subordinates, overseeing and ensuring that restaurant policies on employeep erformance appraisals are followed and completed on a timely basis.

REQUIREMENTS :

1. College or culinary training or good level of cooking and production experience with exceptional proven ability of kitchen management.
2. A minimum of 7 years of experience in varied kitchen positions including food preparation, line cook, fry cook and expediter with min. 1 year of proven experience in similar capacity.
3. Understanding of proper use of major kitchen equipments.
4. Commitment to quality service and food knowledge.
5. Outstanding communication and leadership skills with strong organizational and decision-making skills.
6. Ability to organize efficient work schedules and work under pressure in a time sensitive environment.
7. Up-to-date with culinary trends and optimized kitchen processes
8. Good understanding of useful computer programs (MS Office, restaurant management software, POS).
9. Exceptional hygiene and grooming habits.
10. Flexible to changing working hours.
